Our table olives.
Part of the land is cultivated with the “Nocellara Etnea” olive variety. This group of plants, which number 1200, receive an appropriate irrigation with spring water from the area during the summer period to produce table olives.
The lands for cultivation were freed of the large and small stones to allow crop rotation for agricultural machinery. The soil is never tilled and in fact, is the grass that the wood products from pruning, are shredded by a tractor, leaving in place the rich loam that brings new nutrients to the plants.
Since chemical fertilizers are not used in any of our production of plants all our harvests can be called “natural”.
